Hop



Hop, tall prickly perennial vine (Homulus lupulus) of the mulberry family whose dried female flowers, called hops, contain lupullin, a substance that gives beer its bitter flavor and is used as a preservative. Hops were first grown by the Greeks, who ate the young shoots. They were first used for flavoring beer by the Germans in the 8th century.
