Cultivated for salad since ancient times, lettuce is harvested before its flower stem shoots up to bear its small yellow flowers. There are 3 main types: leaf lettuce has a loose crown of leaves; head lettuce has compact leaves; romaine (or Cos), with elongated leaves, is the most resistant to heat.
