Bitter root



Bitter root, any of several small perennial plants of the family Portulaceae, with long edible roots. It is also called tobacco root because of the tobacco odor generated when cooked. Bitter root has a fat stalk and produces a single rose-colored or white flower. It is the state flower of Montana.
