Lettuce



Lettuce, popular garden plant (genus Lactuca) of the composite family. Cultivated for salad since ancient times, lettuce is harvested before its flower stem shoots up to bear its small yellow flowers. There are 3 main types: leaf lettuce has a loose crown of leaves; head lettuce has compact leaves; romaine (or Cos), with elongated leaves, is the most resistant to heat.
