Jerusalem artichoke



Jerusalem artichoke (Helianthus tuberosus), North American flowering plant closely related to wild sunflowers. It produces edible tubers that have a taste similar to artichokes, hence the name. They are also a source of fructose and alcohol. The plants can grow to 12 ft (3.7 m) in height. They bear yellow flowers.
