Immortelle (Xeranthemum annuun), any of several species of flower belonging to the composite family and related to the asters. The largest of what is known as everlasting flowers, the immortelle has flower heads composed of many small flowers, called florets. The yellow immortelle is characterized as an everlasting flower because it retains its natural form and color even after it has been dried.
