Tofu



Tofu, or bean curd, soft, white, cheeselike food made by treating soybean milk with coagulants and pressing the curds into cakes. It originated in China more than 1,000 years ago and is widely used in Asia. Tofu is bland, high in protein, low in salt and calories, and cholesterol-free. It has thus become popular in the West as a substitute for cheese, cream, and other animal fat products.
